Seasonal eating gets oversold. It will not detoxify anything and the carbon arithmetic is more complicated than the slogans suggest. What it reliably does is put you in front of produce that was picked closer to ripe, which is mostly a flavour argument, and a good one.
A North India calendar, roughly
Growing seasons shift with the year and with altitude, so treat this as a starting point rather than a schedule.
- Winter, December to February: carrot, radish, cauliflower, peas, spinach, mustard greens, fenugreek, beetroot. Oranges, guava, papaya. This is the best vegetable season in the north by a wide margin.
- Spring, March to April: the winter crop tails off. Watermelon and muskmelon start. Fresh coriander and mint are at their best.
- Summer, May to June: mango, litchi, jamun, melon. Gourds, okra, cucumber. Leafy greens get bitter and expensive.
- Monsoon, July to September: a genuinely thin patch for salad vegetables. Gourds, corn, and most fruit imported from cooler regions.
- Autumn, October to November: the winter crop arrives. Pomegranate, custard apple, early citrus.
What seasonal buys you
Shorter time between harvest and plate, generally better flavour, and usually a lower price when supply peaks. Those three are real and you can verify all of them at a sabzi mandi in twenty minutes.
What we will not tell you is that seasonal produce is a specific percentage more nutritious, or that it cuts a specific share of emissions. Both claims circulate with confident-looking numbers attached and neither survives contact with the underlying research. Nutrient retention depends on storage and transport conditions more than on the calendar, and food miles are a small part of most food's footprint.

How to actually use a produce calendar
Shop the pile, not the list. Whatever is stacked highest and cheapest at your local vendor this week is the seasonal item, and it will be better than the thing you planned to buy.
Build one meal a week around a single seasonal vegetable rather than trying to reorganise your whole diet. In winter that is easy. In monsoon it is harder, and that is the point at which frozen peas and stored produce are the sensible answer rather than a failure.
